A type of whole grain, amaranth is another grain that isn’t really a grain – which makes it more acceptable and certainly only minimally harmful in the minds of those who won’t eat grains. According to the Amaranth Institute, amaranth seeds contain more protein than any other grain, and are also very high in vitamins A and C, calcium, iron, potassium, phosphorous, zinc and fiber. The leaves are also edible. Trouble is though that the Institute advocates eating it with corn as a "major component” of a diet – and corn (#3) is undeniably one of the most harmful grains in the world.
